Recipe: zucchini pasta

If you're thinking, "hey lady, why is your pasta green?!" I'll tell ya why... It's zucchini. That's right. Pasta made from nothing but Zucchini, fresh garlic, olive oil and a little salt and pepper to taste.

I saw this on doctor Oz yesterday and figured I'd give it a try. It's a great way to cut back on the carbs while still enjoying your favorite pasta dishes. It tastes fantastic and is actually good for you. Win and win.

The deets: take a potato peeler to a zucchini. Peel off strips of zucchini to create fettucini-like "pasta".

In a pan or wok, heat some olive oil over medium-high heat, add your garlic (I used 2 cloves for 1 zucchini) and swish it around.

Throw in your zucchini, salt and pepper to taste.

Stir the pasta continuously for 2 minutes or until the zucchini begins turning translucent.

Take out and serve right away along side your favorite pasta sauce and viola! So. Stinking. Yummy.
