Recipe: Great Breakfast Muffins

I started making these because my husband would never eat breakfast before leaving to work and it bothered me knowing he had an empty stomach until lunch. This is something that is easy to grab and take on the go!

Below are the ingredients along with optional replacements.

Ingredients:

1 1/2 cups all-purpose flour  - replace with wheat flour
1 cup rolled oats
1/2 cup white sugar - replace with 1/3 cup organic brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 egg whites
3/4 cup milk - I replace with coconut milk from sodelicious
1/2 cup unsweetened applesauce
1/2 teaspoon vanilla extract
1 cup mashed bananas (the riper the better)
1 cup Craisins

Combine flour, oats, sugar, baking powder, baking soda, and salt.

In a big bowl, beat the egg lightly. Mix in the milk, applesauce, and vanilla. Add the mashed bananas, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Throw in Craisins and mix just until it is evenly spread.  Fill a muffin tin with the batter and bake at 400 degrees F for 18 to 20 minutes.
