My love affair with peppermint bark started about 7 years ago when I made the mistake of trying some at Williams Sonoma. OH MY WORD. That stuff is delicious! And addictive. And.... probably a bit pricey. So for last weeks Hot Chocolate "party" I decided that peppermint bark along with brownies would be the best addition and compliment for the rich chocolatey drink. Something that most people don't know about me is that I have quite a bit of anxiety when it comes to entertaining people in my home. I love the company and always have a good time but I go through quite a panic trying to make sure everything is just right. It's kind of a waste in my opinion. No one really rememebers all of the tiny details, right?
For now, I am making an effort to have easy menus or desserts in order to more fully enjoy the actual reason of entertaining. Enjoying eachothers company. This peppermint bark recipe was perfect. Super easy and like I said earlier - delicious.
Ingredients
- 11 oz White Baking Chips
- 11 oz Milk Chocolate Baking Chips
- 1/2 tsp Peppermint Extract
- 12 Candy Canes
Instructions
- Place Candy Canes in Food Processor and crush ( I would crush mine for less time next time)
- Line sheet with parchment paper ( use a tray around 8x8 inches or larger depending on the thickness you prefer)
- Melt Milk Chocolate in microwave by heating at 50% for 1 minute and stirring until smooth.
- Pour milk chocolate into pan and level.
- Place in refrigerator for 20 minutes.
- Melt White Chocolate in microwave by heating at 50% for 1 minute and stirring until smooth.
- Add Peppermint extract to white chocolate.
- Pour white chocolate into pan and level.
- Pour crushed peppermint over white chocolate.
- Place in refrigerator for 20 minutes.
- Then break the peppermint bark in peices and set out in my hot chocolate bar. It seemed like a hit so I'll definitely be making this again.
Side note: I'm actually anti microwave (yeah, I know...) so next time I'll be using a double boiler which I need to buy. But the ease of this recipe just could not be beat.
